Here are a few of the delectable recipes Cayley may serve on your stay. Scroll to the bottom of the page for two classic island cocktails:

Chilled Smoked Salmon Lasagne

Boil lasagne sheets of pasta - use enough noodles for three layers according to the size of your dish. Also, only boil a few at a time to keep them from sticking.

Let pasta cool while you make the salsa and filling:

Salsa
2 ripe tomatoes (diced and seeded)
1/2 red onion (diced)
1 lebanese cucumber (seeded and diced)
4 tablespoons olive oil
2 tablespoons fresh lemon juice
1/2 tablespoon balsamic vinegar

MIX and season with Salt and pepper

Filling
1 small tub sour cream
2 tablespoons fresh lemon juice
2 tablespoons fresh dill or cilantro
1/2 side of good quality smoked salmon (sliced)

Mix all ingredients

Layer pasta/salsa/pasta/salmon/pasta. Layer the
ingredients thick , cling wrap and weight down in the
fridge for at least half a day!


Chicken Salad

6 Chicken Breasts - boil for 20 minutes in water and wine, let cool, then dice.
1 cup white wine
salt and pepper
green grapes chopped in half
fresh pineapple chopped into rough squares
1/4 cup of fresh parsley
2 stalks of celery finely chopped
250g of cheddar cheese cut into small squares
3 tablespoons of mayonnaise
1 tablespoon of mustard

Mix all ingredients in a large bowl and enjoy!


Bushwhackers

2 oz Dark Rum
½ oz Crème de Cacao
splash of Amaretto
1 oz baileys Irish Cream Liqueur
½ oz Kahlua
grated nutmeg

Blend with 1/2 cup of ice in the blender and garnish with nutmeg


Banana Island

1 ½ oz Vodka
splash of Lime Juice
Scoop of Vanilla Ice Cream
½ oz Banana Liqueur
Cream Soda

Blend together all ingredients except the cream soda – which is poured slowly on the top of the drink once poured!
